Valentine’s Day is around the corner. Maybe you already have romantic plans, or you’d like to treat yourself to a scrumptious picnic basket.

YOU’LL NEED

A picnic blanket
Picnic basket or sturdy shopping bag
2 champagne glasses
2 camping cups
A few plates to serve – wood or plastic recommended
Forks, knives and spoons
Sunscreen – if you’re going to be outside (indoor carpet picnics are fun too!)

CONTENTS – pre-prepared

Rosa tomatoes and hard cheese cubes – combined together and wedged on toothpicks
Hummus (see recipe here: link to IG)
Roasted cauliflower dip (see recipe here)
Tzatziki
Toasted whole-wheat pita bread wedges – for the dips
Roasted chicken (buy pre-made from supermarket) – carved and sliced in pieces
Strawberries dipped in dark chocolate
Sparking water
Sparkling wine/ champagne/ sparking apple or grape juice

NB: Remember, when it comes to alcohol, moderation is key (link to IG post on moderate drinking). Never deprive yourself the pleasure of a glass of bubbly. Life’s too short.

Toasted whole-wheat pita bread wedges – for the dips/ soup

MAINS

Griddle pan lean steak and cauliflower mash (with a side green salad)
Mushroom risotto (see recipe here)
Grilled salmon and sweet potato fries (with a side green salad)

DESSERT

Strawberries dipped in dark chocolate
OR double thick Greek yoghurt with fresh mango slices, roasted cashew nuts (not salted) and dark chocolate sauce (see recipe here)
